Summary
The identification of animal species in raw binary meat mixtures is possible by means of isoelectric focusing of the aqueous extracts. Densitometric evaluation of the protein pherograms makes possible the quantitative analysis of such mixtures down to a minimum level of 2–5% of one of the components. The method has some advantages as compared to immunochemical methods.
Zusammenfassung
Bei binären, rohen Fleischmischungen ist eine Erkennung der vorliegenden Tierarten durch isoelektrische Focussierung wäßriger Extrakte möglich. Die densitometrische Auswertung der Proteinpherogramme erlaubt eine quantitative Analyse solcher Mischungen bis herab zu einem Anteil von 2–5% an einer Komponente. Die Methode hat einige Vorteile gegenüber immunochemischen Methoden.
