Zusammenfassung
Frisches Fleisch ist zäh; nach und nach wird es weich und mürbe; dann beginnt es zu verwesen. Das Fleisch unserer Nahrung befindet sich also im prekären Gleichgewicht zwischen einem Zustand, der unsere Kaumuskeln strapaziert, und einem anderen, in dem ekelerregende Gerüche freigesetzt werden, die das sichere Zeichen der Verwesung sind. Läβt sich dieses Gleichgewicht längere Zeit bewahren?
