Der gute König Heinrich IV. (»Paris ist eine Messe wert«) soll seinen Franzosen ein allwöchentliches Huhn im Topf (poule-au-pot) versprochen haben. Das Suppenhuhn à la Henri IV wird mit Hühnerleber,-magen,-nieren,-herz, Speck Zwiebeln, Eiern und Gewürzen gefüllt und zusammen mit Gemüse (Karotten, Sellerie, weiβe Rübchen etc.) in Rinderbrühe gekocht.
