Zusammenfassung
Der Alterungsprozess ist eine Veränderung der Zellen und des Gewebes im Organismus. Das Gewebe wird unelastisch und verliert die Fähigkeit, sich selbst zu reparieren, wenn es geschädigt worden ist, z. B. dehnen sich Lunge und Herz nicht mehr vollständig aus. Die Blutgefäße werden unnachgiebig und starr. Die einzelnen Organe lassen in ihrer Funktionsfähigkeit nach. Die Wahrscheinlichkeit, im höheren Alter an grauem Star (Katarakt), Arteriosklerose, Venenveränderungen, Arthritis1 (Gelenkentzündung) zu erkranken, wird größer.
Glykolisation ist die Reaktion von reduzierenden Zuckern, wie Glucose und Fructose, mit Proteinen und Nukleinsäuren ohne Beteiligung von Enzymen zu quervernetzten hochpolymerisierten Verbindungen.
