Zusammenfassung
In diesem Kapitel beleuchten wir die Kluft zwischen der Kommunikation über „gutes Essen“ im Sinne von nachhaltigen Lebensmitteln einerseits und der tatsächlichen Praxis des Essens andererseits. Unter Bezugnahme auf die Debatten der Geographien der Ernährung werfen wir die Frage auf, wie sich das Reden über „gutes Essen“ mit dem Kauf und dem Essen von Lebensmitteln sowohl überschneidet als auch davon unterscheidet. Der Beitrag fasst Überlegungen zur Nachhaltigkeit, zur Verkörperung, zur Lokalisierung der Praxis des Lebensmittelkonsums sowie die Ergebnisse zweier Forschungsprojekte zusammen, die in unterschiedlichen Kontexten durchgeführt wurden. Ausblickend schlagen wir eine Forschungsrichtung zum Konsum von Essen als „doing food consumption“ vor, die auf verkörpertem und implizitem Wissen, viszeralen Wahrnehmungen und Aktivitäten und somit verbundenen Arten von nicht-rationalen Ernährungspraktiken basiert.

Das Projekt wurde in den Jahren 2014 bis 2018 durchgeführt; gefördert im Programm „Polaritäten der Wissensgesellschaft“ der Steiermärkischen Landesregierung, Abteilung Wissenschaft und Forschung. Die Interviews und Gruppendiskussionen fanden in den Jahren 2015 und 2016 in Graz und in ländlichen Räumen der Steiermark statt.

Die InterviewpartnerInnen wurden in und vor Supermärkten, Lebensmittel-Discountern und Biomärkten sowie in Cafés und Fast-Food-Restaurants in verschiedenen Stadtteilen Hamburgs und Berlins angesprochen und dann zu einem „Eat-along-Interview“ in ein Café eingeladen. In Weiterführung von Carpiano (2009) wurde diese Form der Interviewrahmung gewählt, um Ernährung nicht nur zu thematisieren, sondern im Sinne eines ergänzenden Stimulus auch zu praktizieren.
