Summary
Lactobacillus bulgaricus strains grown on skim milk produce a viscosifying exocellular watersoluble heteropolysaccharide composed of galactose, glucose and rhamnose in an approximately molar ratio of 4:1:1. The molecular weight is approximately 500.000.
