Zusammenfassung
Kohlenhydrate oder Polysaccharide, von griechisch poly = viel und griechisch sakcharon = Zucker, sind wörtlich demnach „Vielzucker“, d. h. Polymere oder Makromoleküle, die aus Monosacchariden, d. h. Zucker-Monomeren, aufgebaut sind. Polymere sind demnach Moleküle aus vielen gleichen Grundbausteinen, wohingegen Makromoleküle heterogen zusammengesetzt sein können [1]. Die Zahl der Wiederholungseinheiten ist bei Polymeren größer als zehn, meist jedoch sehr viel größer [2]. Polysaccharide sind neben Proteinen, Lipiden und Nukleinsäuren eine der vier Hauptklassen von Biomolekülen [3].
