Zusammenfassung
Mineralstoffe sind unerläßliche Bestandteile der lebenden Substanz. Der Ablauf der Lebensprozesse hat einen eukolloidalen Zustand des Protoplasmas zur Voraussetzung, an dessen Aufrechterhaltung die Mineralstoffe maßgeblich beteiligt sind. Die wichtigsten Aufgaben der Mineralstoffe im Betriebe der lebenden Zelle sind:

Aufrechterhaltung der Elektroneutralität,

Aufrechterhaltung eines bestimmten osmotischen Druckes,

Schaffung bestimmter Löslichkeitsbedingungen für die Kolloide,

Bestandteile von Puffersystemen,

Ermöglichung der Reizbarkeit und Beantwortung von Reizen,
-
6
Beeinflussung der Stoffwechselprozesse durch Hemmung oder Förderung von Enzymsystemen.
