Zusammenfassung
Wie wichtig die Rolle der Blutfette, insbesondere die des Cholesterins für die Entstehung der Gefäßkrankheit (Arteriosklerose) ist, wurde im Kapitel »Risikofaktor Cholesterin« dargelegt. Da die Fette ein Hauptbestandteil der Ernährung sind, wurde intensiv nach dem Zusammenhang von Fettverzehr und Blutfettspiegel geforscht. Es stellte sich heraus, dass unsere Ernährung, die traditionell zu viel Fett tierischer Herkunft enthält, als eine Hauptursache der zu hohen Blutfettspiegel angesehen werden muss.
