Abstract
The different plant operations of the seafood processing industry generate large quantities of effluents. The main plant processes are defrosting, cooking, canning and cleaning. The characteristics of the waste waters produced are defined and conditioned by the operations and production lines of the factory. Some factories work practically the whole year round and produce only one type of product (Veiga, 1989), such as the tuna processing industries, others possess different mixed seasonal production systems (Soto, 1990).
