Abstract
Raw sausage consists of raw, finely chopped meat and fat, which are mixed with salt, spices and a few additives, put into casings and, at the appropriate temperature and air humidity, fermented and dried for a sufficient length of time; the finished products are usually stored without refrigeration and consumed without being heated.
