Zusammenfassung
Enzyme sind Biokatalysatoren, die biochemische Reaktionen beschleunigen und damit den Stoffwechsel von Organismen aufrechterhalten. Bei Enzymen handelt es sich um Proteine, die aus Aminosäuren aufgebaut sind. Die eine Hälfte des Kapitels widmet sich dem allgemeinen Aufbau von Enzymen sowie deren Struktur. Viele Enzyme benötigen für ihre Aktivität Cofaktoren. Das können entweder kleine organische Moleküle oder Metallionen sein. Das Kapitel gibt einige Beispiele für Cofaktoren in Enzymen und ihre Rolle in enzymkatalysierten Reaktionen. In der zweiten Hälfte des Kapitels werden die Mechanismen beleuchtet, die Enzyme zur Katalyse von Reaktionen nutzen. Dazu zählen Säure-Base-Katalyse, kovalente Katalyse, Metallionenkatalyse, Annäherungs- und Orientierungseffekte sowie die Stabilisierung des Übergangszustandes.
